What is Gluten?
Gluten is a combination of proteins found in wheat and in other grains. It is milled and ground into a powder and used as an additive in foods, such as ketchup and ice cream. In this case, it works as a stabilizer. It is also known to be used when baking bread because it improves its rising; adds protein to an otherwise high carbohydrate food; and provides the “chewiness” to its final product.
Why is it important to label your product as gluten-free?
The United States Food and Drug Administration suggests that companies specifically say whether a product contains gluten in an effort to help those consumers who may have allergies and for those who have celiac disease.
Celiac disease is a digestive disorder. Gluten, commonly found in breads and cereal grains, can trigger harmful effects in people with this disease. To be well, medical professionals caution people with celiac disease to avoid food and beverages that are made with gluten.
